FROM PHU QUOC TO MU CANG CHAI | TRACING THE FLAVOURS BACK TO ITS SOURCE

Set amidst the quiet mountains and terraced landscapes of Garrya Mu Cang Chai, Bittersweet Chocolatier presents an intimate guest shift experience exploring the connection between cacao, cocktails, and the ingredients of Vietnam’s Northern Highlands.

Hosted by Bao Trong, Factory Manager of Bittersweet Chocolatier, alongside bartender Louis Long Ha, the evening is designed as a sensory journey through flavour – where each pairing reflects the atmosphere, ingredients, and spirit of the Northwest region.

Drawing inspiration from local botanicals and highland ingredients such as shan tuyet tea, mắc khén, cacao, and native mountain herbs, the pairing menu unfolds slowly through carefully layered cocktails and chocolate creations. Each combination is crafted to express the depth and quiet complexity of Northern Vietnam – earthy, aromatic, and deeply rooted in place.

Rather than approaching pairing as contrast alone, the experience focuses on harmony and storytelling through flavour. The warmth of spices, the bitterness of cacao, the floral lift of tea, and the freshness of mountain botanicals come together to create moments that feel immersive yet restrained, allowing every sip and bite to gradually reveal its character.

The evening will also mark the exclusive preview of two upcoming Bittersweet chocolate creations inspired by the Northwest Highlands, unveiled for the first time in Mù Cang Chải before their official release.

More than a guest shift, the event reflects Bittersweet’s ongoing exploration of Vietnam through ingredients – tracing flavours back to their origins and transforming regional identities into contemporary culinary experiences.
