Bittersweet’s Guest Shift at Park Hyatt Saigon
As part of the Go Local Series of Park Hyatt Saigon, Bittersweet stands as one of the early pioneers shaping Phú Quốc’s emerging speakeasy culture: subtle, intimate, and deeply personal. It is less about what’s served, and more about how it’s created: each drink a response, each flavor a reflection of the guest sitting across the bar.
At the heart of this experience are Trọng and Hannah, co-founders whose creative dialogue defines the space. Their approach blends technical precision with instinct, where modern craft meets the raw character of local ingredients. Phú Quốc black pepper adds a quiet heat, single-origin cacao lends depth and memory, while native fruits, herbs, and house-fermented elements bring a sense of place into every glass.

For one night only, Bittersweet extends this philosophy beyond its hidden walls: an ephemeral gathering at 2 Lam Sơn, beginning at 9:00 PM on 12 March 2026, and continuing until the night finds its own ending.
